Pumpkin Puree Bread with Walnuts

The fall is already upon us and that can only mean one thing...bring on the pumpkins and cinnamon. You have stayed home, surrendered yourself to your kitchen and came out as a chef in your own right out the other end. But as always, there are more recipes to try and many more ways to utilize appliances in your home. Try this delicious pumpkin puree bread recipe with your breadmaker and impress everyone at tea time with a soft and flavorful slice!

 

Ingredients (for BB-CEC20):

  • 3 large eggs, beaten
  • 1/3 cup vegetable oil
  • 1 tsp. vanilla extract
  • 1 cup canned pumpkin puree
  • 2 cups all purpose flour
  • 3 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 cup sugar
  • 1/2 tsp. salt
  • 2 tsp. pumpkin pie spice
  • 1 tsp. cinnamon

 

When beeps sound, add:

  • 1/3 cup raisins, chopped
  • 1/3 cup chopped walnuts

 

Ingredients (for BB-PDC20):

  • 3 large eggs (150g), beaten
  • 72g (approx. 80mL) vegetable oil
  • 5g (1 tsp.) vanilla extract
  • 240g (1 cup) canned pumpkin puree
  • 103g (1/2 cup) sugar
  • 2.5g (1/2 tsp.) salt
  • 260g (2 cups) all purpose flour
  • 9g (3 tsp.) baking powder
  • 5.5g (1 tsp.) baking soda
  • 4g (2 tsp.) pumpkin pie spice
  • 2g (1 tsp.) ground cinnamon

 

 When beeps sound, add:

  • 47g (1/3 cup) raisin, cut into ¼” (6mm) pieces
  • 37g (1/3 cup) walnuts, cut into ¼” (6mm) pieces

 

Ingredients (for BB-HAC10):

  • 2 large eggs, beaten
  • 1/4 cup vegetable oil
  • 1 tsp. vanilla extract
  • 1/2 cup canned pumpkin puree
  • 1 cup all purpose flour
  • 3 tsp. baking powder
  • 1/3 cup sugar
  • 1/4 tsp. salt
  • 1 tsp. pumpkin pie spice
  • 1/2 tsp. cinnamon

 

When beeps sound, add:

  • 1/4 cup raisins, chopped
  • 1/4 cup chopped walnuts

 

 

Directions: 

 

1. Sift all the flour ingredients (all purpose flour, baking powder and baking soda). Add the spices (pumpkin pie spice and ground cinnamon) and lightly mix. Don't forget to check and see that the kneading blade(s) are properly attached, and add the ingredients to the baking pan in the order listed, except for the raisins and walnuts. Make sure you don't plug in the breadmaker until you are ready to start the cycle.

2. Place the baking pan into the Home Bakery, close the lid and plug the cord into the outlet. Select the CAKE course, and press START.

3. When the add beep sounds, open the lid and carefully scrape off any flour residue on the sides of the pan using a rubber spatula. Please be careful if the kneading blade(s) are moving. Add the raisins and walnuts, close the lid and continue baking. For BB-HAC10, BB-PAC20 and BB-PDC20 models, press START to resume kneading.

4. When baking completes, press CANCEL and remove from pan. Allow bread to cool before slicing and serving. While waiting for the bread to cool, put your favorite pot of tea or coffee to brew, to enjoy with a fresh slice of the bread!
